*Koki Kampung Koh Chili Sauce*
We have found this Kampung Koh Chili Sauce factory in Sitiawan. When we entered the factory, the smell of the chili is really strong that some of us couldn’t stand it. We interviewed the boss and he told us that he had started the business since 1983.
It has been 28years until today. There are several kinds of chili sauce such as the original chili sauce, chili sauce with garlic, extra spicy chili sauce; keep fit small chili sauce and also tomato sauce.
He explained that the chili sauce is a bit more spicier than other chili sauce as they are using the dried chili that are imported from China and India which is cheaper and of better quality. The ingredients used in making the chili sauce are the red hot chili, garlic, sugar, salt, modified starch and vinegar. The boss added that the right amount of ingredients is very important to produce a good quality of chili sauce.
Each type of chili sauce has its own speciality.
The keep-fit chili sauce derives its name from the pint-sized and slender chili padi. He said that many people had wrongly assumed the sauce works for weight loss. The boss told us that he uses chili padi instead of regular chilies because chili padi is well known for its spiciness. For the extra spicy chili sauce, he said that we will feel the burning sensation when we taste it. The chili sauce is the perfect sauce to spice up all kind of dishes. Besides that, other chili sauce also goes well with the famous dishes in Sitiawan, for example deep fried squid, oyster omelet and etc. The boss said that the chili sauce with garlic is the best seller among all kinds of chili sauce they have.

*Marine products and dried seafood tip bits*
The next thing we are going to introduced you guys are the trademark of Sitiawan, which is the marine products and dried seafood tip bits. The name of the shop is Anak Kampung Pangkor.
P.s: For your information, Sitiawan is the first place to get salted fish and dried
anchovies, which is also known as ikan bilis. *****
The boss told us that both of these marine products are high in protein and has rich nutrition. For the dried anchovies, after the fisherman catch the fish, the fish are first boiled in sea water on the boat, after the fishing boat arrives on the shore, it will be sorted and dried under the sun.
The best quality of dried anchovies will have bright blue eyes, fairer colour and smaller in size. The dried anchovies can be cook in many ways. For example, we can make Sambal ikan bilis. The dried anchovies cooked in a spicy paste and it is synonymous with Malaysia famous food, which is Nasi Lemak. Besides that, we can also fry it and serve with some dishes. The crispy anchovies definitely add an extra savory kick to the dishes.
Move on to the salted fish, it is about the same as the anchovies. Salted fish are sprinkled heavily with course sea salt and then left to dry under the hot sun for several days. The boss told us that salted fish are made from various kinds of fish. The cheaper one are those made from small fishes like kempung and gelama. The best salted fish, mui heong, is those made from ikan kurau. The flesh is soft and is gently salted.
Salted fish can also be cook in many ways. For example, it can be steamed and serve with porridge. Besides that, we can also fry it. Although it smells bad for some people, after being cooked, I am sure that the aroma would whet your appetite and sustain you! The marine products sold in this shop are more expensive because no additives are added.
